Vietnamese Chicken Cabbage Salad

Ingredients

Salad:
4 cups shredded green cabbage
2 cups shredded cooked chicken
2 carrots, shredded
1/2 red pepper, thinly sliced
1/4 red onion, thinly sliced
1/3 cup cilantro
1/3 cup fresh mint
1/3 cup chopped unsalted peanuts

Dressing:
1/2 cup lemon juice
1/4 cup rice wine vinegar
1/4 cup honey
2 tbsp fish sauce
1 stick pouch Pho Chicken Broth Concentrate
2 tbsp fresh gingerroot, minced
2 cloves garlic, minced
2 Thai chili peppers, finely sliced

Preparation

Cook Time: 0 minutes

Dressing: Whisk together lemon juice, rice wine vinegar, honey, fish sauce, Pho Chicken Concentrate, ginger, garlic and chili peppers.

Add cabbage, chicken, carrots, red pepper, onion, cilantro and mint to large bowl; toss with Dressing. Garnish with peanuts.
