Sausage and Bean Soup


1 can kidney beans, drained
1 can pinto beans, drained
1 can crushed tomatoes
2 tablespoons olive oil
4 cups water
4 pouches Savory Choice Chicken Broth Concentrate
1 lb mild Italian sausage
1 large onion, chopped
2 celery stalks, diced
1 large zucchini, chopped
1 large potato, diced
1 teaspoon minced, garlic
1/4 teaspoon Italian seasonings
1 teaspoon pepper flakes
2 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce


Heat olive oil in a medium pot over medium heat and add sausage. Cook until lightly browned. Crumble meat into smaller bite sized pieces. Add onions, celery and garlic and sauté for 5 minutes. Add zucchini and seasonings. Deglaze the pot with the vinegar. Add the Worcestershire and cook until liquid is reduced. Add Savory Choice broth concentrate, water, beans and tomatoes. Cook over medium heat for an additional 30 minutes.
