Quinoa Tabbouleh with Fresh Mint

Serves 4

Ingredients

1 cup quinoa 
2 cups water
2 packets Savory Choice Reduced Sodium Vegetable Broth Concentrate
½ teaspoon salt
1 large cucumber, seeded and diced
1 pint cherry tomatoes, halved
¾ cup finely chopped flat-leaf parsley
¾ cup chopped fresh mint
4 scallions, thinly sliced
¼ cup fresh lemon juice
2 tablespoons olive oil
½ teaspoon freshly ground pepper

Preparation

Place the quinoa, water, Savory Choice Vegetable Broth Concentrate, and salt in a medium saucepan and bring to a boil over medium-high heat. Reduce the heat to low, cover, and simmer until the quinoa is tender, about 15 minutes. Transfer the quinoa to a large mixing bowl and set aside to cool.

Add the cucumber, tomatoes, parsley, mint, and scallions to the quinoa and stir to combine. Stir in the lemon juice, olive oil, and pepper. Taste and adjust seasoning if needed. Serve immediately or chill for several hours before serving.
