Homemade Instant Noodle Soup to Go

Serves 1


Forget those packets that are loaded with sodium, fat, sugar (yes, sugar!), and who knows what else. With a packet of Savory Choice Chicken Broth Concentrate and a handful of fresh ingredients, you can make your own instant soup that’s perfect for taking to work or school for a quick, healthy lunch.


1 packet Savory Choice
½ teaspoon low-sodium soy sauce
¼ teaspoon sesame oil
¼ teaspoon chili paste (optional)
1 cup baby spinach
¼ cup sliced carrots
1 tablespoon chopped cilantro
1.5 ounces (1/4 of a 6-ounce package) instant ramen noodles


Empty the broth packet into a pint-sized mason jar. Add the soy sauce, sesame oil, and chili paste, if using. Next add the carrots, spinach and cilantro. Top with the uncooked noodles. Cap the jar and take along to work or school. You can even prepare several jars ahead of time and keep them in the refrigerator for up to 3 days.

To serve, add 1 cup of water to the jar and microwave, uncovered, on high for 2 minutes. Remove the jar from the microwave carefully (the jar will be quite hot), stir, and microwave for another 2 minutes. Again, remove the jar from the microwave carefully and stir. Let sit for 2 minutes. Serve hot.
