Serves 4

Ingredients

2 lbs ripe tomatoes, seeded and chopped or 2 cans seedless chopped tomatoes
1 seedless cucumber, peeled and chopped
2 cloves garlic, chopped
1 red onion, chopped
3 pouches Savory Choice Reduced Sodium Vegetable Broth Concentrate
2 cups water
1 cup tomato juice
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoons cumin
2 tablespoons cilantro, chopped
2 tablespoons parsley, chopped
Salt and pepper to taste

Preparation

In a blender or food processor, puree 1/2 of the tomatoes, cucumbers, garlic, and onion, along with the water and oil. Transfer to a medium bowl. Add remaining ingredients reserving 1 teaspoon of the cilantro and parsley. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.) Garnish with remaining cilantro and parsley.
