Curried Couscous Salad with Apples and Jalapenos


1 cup whole-wheat couscous
½ cup raisins
1 packet Savory Choice
1 ¼ cups boiling water
¼ cup fresh lemon juice
2 teaspoons honey
1 ¼ teaspoons curry powder
½ teaspoon salt
¼ teaspoon freshly ground pepper
2 tablespoons olive oil
2 scallions, thinly sliced
1 small apple, cut into wedges and then thinly sliced (Granny Smith, Pink Lady, Honey Crisp or Macintosh)
1 to 2 jalapeno chilies, seeded and minced


Place the couscous, raisins, and Savory Choice Vegetable Broth Concentrate in a large, heat-safe mixing bowl and pour the boiling water over the top. Stir to mix, cover, and let sit for 5 minutes.

In a small bowl, whisk together lemon juice, honey, curry powder, salt, and pepper. Add the olive oil in a slow stream while whisking constantly and whisk until emulsified.

Add the scallions, apple, and jalapeno to the couscous-raisin mixture. Add the dressing and stir to combine well. Taste and adjust seasoning if needed. Serve immediately or chill for several hours before serving.
