Beef Barley Soup


1 pound lean stew beef, cut in 1/2-inch cubes
1/2 onion chopped
2 ribs celery, chopped
2 medium carrots, diced
3 cloves garlic, minced
2 T olive oil
1 bay leaf
2 14oz canned Tomatoes, diced in juice
3/4 cup barley
1 T chopped oregano
6 pouches Savory Choice Beef Flavor Broth Concentrate
6 cups water
Pepper to taste


Heat a 4 qt heavy lined pot; heat the olive oil over medium heat. Add onion, celery and carrots, sauté for 3 to 4 minutes. Add the stew beef, garlic and bay leaf. Continue to sauté until beef has browned and seared. Add the remaining ingredients, bring up to a boil. Turn down heat to a simmer and allow simmering for 30 to 45 minutes.
